My family is really big on banana bread, probably because my husband and kids are not fans of ripe bananas 🙂 I’ve made a lot of these breads over the years, experimenting with different combinations and this recipe is one of our favorites!
Typically in the past, I’ve made banana bread with baking soda, then discovered the light, almost cakey texture that baking powder gives, so this recipe is entirely new. The coconut mixed in and sprinkled on top along with a pinch or two of brown sugar gives it a lovely, golden crust that’s full of flavor and texture.
Recipe:
1 stick softened butter
1/2 c. white sugar
1/2 c. brown sugar
3 ripe bananas
2 eggs
1/2 c. sweetened shredded coconut
1 tsp vanilla
3 tsp baking powder
1 tsp salt
2 c. flour
Directions:
Cream butter and sugars together. Add in mashed bananas (I just toss in large chunks and the running mixer will mash them up if they are nice and ripe) eggs, coconut and vanilla. In a separate bowl, combine dry ingredients. Add dry mixture slowly to wet batter, mixing just enough to incorporate but not to overwork. Pour batter into a greased bread pan and sprinkle the top with 1 tbsp brown sugar and 1 tbsp coconut. This will give it a lovely crust. Bake at 350 degrees for about an hour. A toothpick should come out clean.
A little ice cold milk and you are all set! :]
If you make the bread, I’d love to know how it turns out for you! Do you have a favorite bread recipe that you turn to?
Wow, what an easy recipe and looks so yummy! Thanks for sharing. I am going to copy this and try to make it soon. God bless!
Debbie, I’m so glad you’re going to give this one a try. I really hope you and your family like it!
Mmmm, looks yummy, Joanne! I will definitely try it! (my husband and boys are not fans of overripe bananas either)
Smiling at this, Cathy. We are in the same boat! It’s such a great way to use up those ripe bananas. 🙂
Sounds delicious! I’m on my way to the ferry but I will bake in the wee morning and let you know how it turns out! (In this house, if you want documented proof, you must take a snapshot as it comes out of the oven! No waiting 24 hours to slice it, it never makes it!)
Blessings and thanks for sharing,
Noelle,
oh, how neat! Enjoy your fairy trip. I’m trying to remember where you are…Scotland?? Yes! Instant photos are crucial 🙂 I had to re-bake this the other day just to snap the one above and it was quickly gobbled up. Have a great day!
Ahhh! That looks good! 😀 Might make it sometime…
Jenna, if you do, I hope you like it! 🙂

Joanne – an update on your scrumptious banana bread recipe??? YES! Sounds like a keeper, too, cuz my champion LOVES coconut on just about anything.
Thanks for sharing!
Becky,
If your champion loves coconut, this is definitely the one for him. I just LOVE that you made the cinnamon version, too. I hope this one works out for you!
Sounds good Joanne. I have three overipe bananas calling to me. Now I know what to do with them.
Yay! So glad to know this will help you use those up. 🙂 Happy baking!
Why must you do such things to me???
Thanks! 🙂 This looks so yummy!
