My husband’s family has a long standing tradition. His dad is German and one thing that’s a must every Christmas Eve is a dinner of waffles and sausage.
We’re not talking any ol’ waffles and sausage. We’re talking the good kind. His mom goes out and buys all types of gourmet sausages. She sets the table with a variety of dipping mustards, bowls of her home-grown berry sauce for topping those waffles, and glass dishes of homemade whipped cream. Warm syrup fills little pots all over the table and everyone enjoys this wonderful tradition.
It’s such a simple meal. But it’s such a special tradition. Made more so by the whole family gathering together and watching all the kids aglow in twinkle lights as everyone fills the kitchen and stirs, and fries and works together. Last year, I brought the fixings for homemade sourdough waffles and they were delish. This year, I wanted to try something different (Ok, actually, I killed my sourdough starter…but that’s another story) 😉 I thought of an idea to make lemon poppy seed waffles and they turned out oh-so-yummy! These would make a great addition to your Christmas breakfast or brunch.

Lemon ~ Poppy Seed Waffles
1 c. flour
2 Tbsp baking powder
4 Tbsp sugar
The zest of 1 lemon
1 Tbsp poppy seeds
1/4 tsp salt
1 1/3 c. milk
1 tsp vanilla
2 Tbsp vegetable oil
small squeeze of lemon juice
1 egg
You could (and probably should) mix the wet and dry ingredients separately, but I just tossed everything in a bowl, mixed it gently and it turned out AMAZING. 🙂

Sounds wonderful, but I couldn’t help wondering how those waffles would be with a splash of moonshine. 😉
LOL. I do have a jar that I need to use up. 😉 They are really tasty! I sometimes make the dry mix ahead of time, then just add in the other ingredients when it’s time for breakfast.
