Can I just take a moment to say how excited I am that these cookies have come into my life? My hubby is a total cookie man and well, can you beat THREE ingredients?! I know I’m not the first person to make cookies this way, so while I’m not re-inventing the wheel here, I just had to pass it along for anyone looking for a cookie that is easy AND delish!
They’re chewy and moist and couldn’t be simpler.
Recipe:
One box of lemon cake mix (I used Pillsbury)
1/3 cup of oil
3 eggs
That’s it! Mix and drop by spoonfuls onto a greased pan and bake @350 for about 11-13 minutes. I know recipe ratios can vary from recipe to recipe, so if you have another cake mix on hand other than Pillsbury, simply follow the directions on the back, but leave out the water.
This recipe doesn’t make a ton of cookies, so if you’re making them for a crowd, probably 2 or more boxes would be a good idea…and really just a good idea in general because they are a major crowd pleaser.
I have a few ideas for building on this basic recipe like adding poppy seeds or mixing up a simple glaze with lemon juice and powdered sugar. However I was so excited that I forgot to get creative, but I think that’s OK because even with 3 ingredients, these cookies are divine.
Ooo, I’ll have to try them! I’m all for simple. The cookie recipe I make most often are these no-bake drop cookies. Just four ingredients: rice krispies, peanut butter, karo syrup, and sugar. They’re my husband’s favorite, which is good, because I don’t have much time to bake. 🙂
Lindsay, they couldn’t be easier. I’m a chocolate girl myself, but my husband is more into things that are fruity like cobblers, etc. So he was excited about these and they are SO handy in a pinch!!
And now I will have to try your 4 ingredient cookies for me 😀 Yummy!! And they sound so easy.

There is just something about a lemon treat, isn’t there? I really want to try these next time with doing a lemon/powered sugar glaze to make them even lemony-er (pretty sure that’s not word.) 😉

I’m making these for the teachers today!!! I only have white cake mix in the cabinet. Do you think that would work? Perhaps put in some lemon zest? or almond extract? HELP!

I love lemon cookies but am on weight watchers right now and have to keep that stuff out of the house because one just won’t do!
I’ll bet you could get chocolate cake mix and make chocolate cookies! Or other types! The list could be endless…..
Oh, Brenda, I can totally relate! I’m the same way…would rather do without…it is so hard to just have ONE when they taste so good! The chocolate cake mix is really good. I tried it just this week, using devil’s food cake mix, and it was heavenly!! ( I know that’s an oxymoron, right?) 🙂
Hey there Joanne!!!! I just wanted by to leave you this virtual message sent via the interweb to say that I absolutely ADORE these scrumptious dollops of 100% pleasure!!! I am beyond happy that I stumbled upon this LIFE CHANGING recipe. I don’t think that I would be the same woman without it. So moist, so chewy, and most importantly so EASY. My husband goes crazy for them!! But he likes anything thats easy!;) I also wanted to give you a tip that I developed by making these EVERY. DAY. Since I just can’t seem to keep the cookie jar full, (my kids devour these babies), I found myself taking more weekly trips to the super market than usual. When cleaning my 17 year old sons room, I came across a very large supply of white al purpose flour hidden under his bed. I’ve come to the conclusion son is secretly a sales rep for a local flour company! HA! Who would have known!!! I’m just so proud of my boy for taking this initiative and embracing the business side of himself. I tend to be a bit overwhelming when it comes to controlling my excitement over my children’s accomplishments 🙂 Im guessing this is why he hasn’t been telling me about it! 🙁 The kids (and my husband) have seemed to love them even more since I started using it! I REALLY just can’t sen to get enough of them either. Joanne, not only do your cookies satisfy my culinary cravings, but they also leave me feeling alert, awake, and CRAVING more. its almost as if I have an addiction. I really don’t have anything bad to say about them at all! However, if you are going to try my trick with the flour, try not to inhale it while you are baking. I have found that it has been causing me severe nosebleeds! Don’t want bloody cookies! LOL

What is in the Lemon cake mix? This sounds lovely but we do not have lemon cake mix and i don’t want to go outside in the pouring rain just to get a cake mix! what would you recommend to bake for a then year old who is extremly good at baking and has a little sister who doesn’t like any type of cake
Faith – the Lemon cake mix is like your standard cake mix but just with lemon flavor. Really any kind of cake mix works great 🙂 How neat you have a little baker in the house!
